1 1/2 cups water (water needs to be about 85°)
4 tablespoons olive oil
1 teaspoon salt
4 cups flour
1/2 cup combination of rye flour & wheat flour
1/2 teaspoon ground black pepper
1 tablespoon bread machine yeast (no rapid rise)
Put ingredients in bread machine in order given. Make a well for yeast. Don't let yeast come in contact with the water. Put bread machine on dough cycle. Will make eight small individual pizzas or one large pizza.
Roll dough on floured board. Can dust board with flour or corn meal.
Preheat oven for one hour at 475°. Best to bake on pizza stone in bottom of oven.
Can make pizza dough by hand, follow pizza dough technique above and mix by hand.
This recipe makes 4 - 13' pizzas.
